1cupcherry tomatoeshalved
1cupsweet cornthawed if frozen
1/2cupcilantrochopped
1avocadopit and peel removed
2tbspslime juice
1tsplime zest
1/2tspground cumin
Instructions
Place arugula, hearts of palm, scallions, cherry tomatoes, sweet corn, and cilantro in a large bowl and toss to combine.
In a small bowl, mix the avocado, lime juice, lime zest, and cumin. Add a dash of salt or no-salt seasoning, if desired.
Place the avocado mixture in the large bowl of salad ingredients and fold in gently.
Notes
One can of water-packed artichokes may be substituted for the can of hearts of palm.Add 1 tablespoon nutritional yeast to the avocado mixture for a slightly "cheesy" flavor.Add 1 cup of your favorite white beans to turn this salad into a hearty main dish.Whole grains like cooked farro or kamut add wonderful contrast and texture to this salad.
