Place all ingredients in a small mixing bowl.
Whisk until smooth and creamy.

SERVING SUGGESTION:Roast 1 large red beet and 1 large golden beet. Chill. Chop beets into bite-sized pieces.Roughly chop 6 cups of spinach, arugula, and kale.Place salad ingredients in a large serving bowl.Pour yogurt mint salad dressing into the bowl and mix well.Top with sprinkling of your favorite raw or toasted seeds and nuts.
